Sea Bass on the fly what a great challenge!!
Penne Pasta with Sea Bass
Serves 4
Preparation Time 25-30 minutes Cooking Time 20-25 minutes
Recipe
670g sea bass fillets 50g butter 1 celery stick, trimmed and finely diced 1 medium onion, finely chopped 2 garlic cloves, finly chopped
1 bulb fennel, trimmed and finely diced 1 tablesthingy fennel seeds 3-4 beef tomatoes, peeled, seeded and diced 345g pasta 2 tablesthingy olive oil salt and pepper
Method
1. Fillet the seabass and remove pin bones with tweezers. cut into 4 pieces. 2. Bring a large pan of salted water to the boil. 3. Melt the butter in a large sauce pan, add celery, onion, garlic and diced fennel and cook for about 10 minutes until the vegetables are soft. Stir in fennel seeds and cook for another 1 minute. Stir in the tomatoes, season to taste and simmer on a low heat for 10 minutes. 4. Meanwhile, add the pasta to the boiling water, return to a rolling boil, stir and cook for 10-12 minutes until the pasta is soft. Drain, reserving about 150ml of the cooking water. 5. Heat the olive oil in a large frying pan and add the fish, flesh-side down. Cook for 2-4 minutes, then turn the fish over and cook for a further 2-4 minutes. Season to taste. 6. Stir the cooked pasta into the sauce. Add some of the reserved cooking liquid if the pasta is a little dry. Sthingy past in to bowls and top with sea bass. Drizzle with a little extra virgin olive oil. Serve immediately.
This recipe works great with cod or mullet.
